8 large poached eggs
4 ounces lean ham slices
Hollandaise Sauce:
5 tablespoons dried egg
5 tablespoons water
1 tablespoon lemon juice
1/4 teaspoon Dijon mustard
1/4 cup canola oil

Directions:
Directions:
Place all sauce ingredients into a high speed blender and whir for about 1/2 minute. Slice 1/2 loaf into 8 slices and toast. Poach eggs and warm ham. Place ham on bread and top with an egg and spoonfuls of sauce. 8 servings.
