1 to 2 lbs boneless, skinless chicken thighs
1 c all purpose flour
Tony Chachere's or other cajun seasoning mix
1/2 c cooking oil
1 pkg fresh or frozen seasoning mix (onions, peppers, celery)
1 pkg frozen cut okra
1lb andouille or other smoked sausage
1 to 2 boxes chicken broth (or equivalent water & chicken boullion)
cooked rice

1. Cut andouille into medium sized dice. Put andouille, seasoning mix and okra in a bowl.
2. Mix flour with Tony Chachere's or other seasoning to taste.
3. Heat oil in frying pan on med-high until shimmering.
4. Dredge chicken thighs in flour, fry in hot oil, about 2-3 minutes per side. Don't crowd. Drain on paper towels. Chicken does not have to be cooked through, just a nice crust on both sides. When cool, chop into bite-sized pieces.
5. Make the roux: discard all but 1/2 c of oil remaining in frying pan, or add oil to equal 1/2 c if needed. Heat on high heat, adding 1/2 cup of the remaining seasoned flour used for dredging. Whisk constantly, otherwise your roux will burn. When it's the color you want (I do about the color of milk chocolate), turn down the burner to medium and add the andouille and vegetables. Stir until pan cools down a bit, then let it cook for about 15 minutes, stirring occasionally.
6. When vegetables are wilted, add chicken broth. Stir until the roux has been absorbed into the broth. Simmer for at least 10 minutes.
7. Serve over hot cooked rice.

I don't usually measure anything when I cook gumbo; also, the ingredients can vary to use what you have on hand (I won't put tomatoes in my gumbo, but go ahead if you want to ruin a perfectly good gumbo!).This can be simmered for a long time after it's been assembled. Usually, though, I'm making this in a hurry, and we eat it within an hour.
