French Onion Soup Recipe

4 tablespoons of butter
6 cups thinly sliced onions (about 5-6 onions)
1 clove of garlic minced
2 tablespoons all Purpose Flour
½ cup sherry or white wine
4 cups beef stock or broth
¼ teaspoon dried thyme
salt and pepper to taste
4-8 slices crusty bread
½ cup shredded mozzarella cheese
½ cup Gruyere Cheese

Directions:
Directions:
Melt butter in large pot over low heat.
Add thinly sliced onions.
Cook uncovered and stirring often 35-40 minutes.
Cook until onions are soft and caramelized.
Add garlic and cook stirring one minute.
Add sherry or wine and deglaze the pan.
Simmer until wine has mostly evaporated.
Add the flour and cook stirring for one minute.
Add beef stock and thyme and stir to combine.
Bring to a boil then reduce heat and simmer for 10 minutes stirring occasionally.
Taste and season with salt and pepper as needed.
Pre-heat broiler and then toast the bread slices on both sides.
Ladle soup into bowls and top each bowl with 1-2 slices of bread and sprinkle each with mozzarella and gruyere cheese.
