2 zucchinis cubed

8 oz cherry tomatoes halved

4 scallions chopped

4 cloves garlic minced

6 oz chickpeas drained and rinsed

2 c couscous

4 c chicken or vegetable stock/broth

1 c feta cheese

1 T butter

olive oil

Directions:
Directions:
Preheat oven to 425º. Drizzle olive oil on zucchini and tomatoes. Bake for 20 minutes.

On a separate baking sheet drizzle chickpeas with oil.

Bake on top rack for 20 minutes.

Saute butter, scallions, and garlic. Toss in couscous for 2-3 minutes.

Stir in broth and bring to boil. Reduce heat and simmer 10-12 minutes.

Add half vegetables and cheese.

Divide onto plates. Top with chickpeas, vegetables, and cheese.
