4 large Baking Potatoes
⅔ cup Butter
⅔ cup All Purpose Flour
6 cups milk
½ tsp salt
½ tsp black pepper
12 slices of bacon, cooked, crumbled, and divided in half.(I use turkey bacon)
1 ½ cups Shredded Cheddar cheese divided
1 8oz tub of sour cream
1 -2 bunches of green onions, chopped and divided in half
You can add one can of chicken stock to make the soup thinner if desired.

Wash Potatoes; prick with fork and bake at 400º for 1 hour or until fork-tender through center. Let cool. Cut potatoes in half, scoop out half of each potato and set aside in a bowl. Cut the other half of the potato into small bit size cubes. They will be a bit messy, thats okay. Discard skins. Melt butter in kettle over low heat and add flour. Cook 1 minute stirring constantly to make a roux. Gradually add milk, stirring constantly, until thick and bubbly. Add potato pulp, salt, pepper, half the green onions, half the bacon, and one cup cheese. You can aCook until thoroughly heated. Stir in sour cream and heat through. Serve with remaining green onions, bacon and cheese as a garnish.
