10 cups low sodium, chicken broth
½ cup pearl barley
3 Carrots, finely diced
3 Stalks Celery, diced
½ lb shiitake mushrooms, stems discarded, caps diced
2 cups Diced cooked Chicken. Part of a rotisserie Chicken is great.
¼ cup chopped fresh dill or 1 TB dried dill
3 TB Fresh Lemon Juice
Salt and pepper to taste

Add chicken broth to a 4 Qt. saucepan and bring to a boil. Add barley, mushrooms, carrots, and celery and simmer, covered for 40 minutes. Add remaining ingredients and simmer for five minutes and serve.
