1/2 cup butter or margarine (room temperature)
1/2 cup peanut butter (smooth or crunchy)
3/4 cup brown sugar (packed)
1/4 cup granulated sugar
1 egg
1 tsp vanilla extract
1/4 tsp salt
1-3/4 cups all-purpose flour
1 tsp baking soda
3 tbsp granulated sugar
48 Hershey kisses, unwrapped

Directions:

Preheat oven to 375º
In a medium bowl, beat together butter or margarine, peanut butter, brown sugar and 1/4 cup granulated sugar, egg, vanilla and salt until light and fluffy.
Add flour and baking soda, beat until thoroughly blended.
Shape dough into 48 balls. Roll balls in 3 tablespoons granulated sugar.
Place 2 inches apart on ungreased cookie sheets.
Bake 8 to 10 minutes or until light golden.
Remove from oven and immediately top each cookie with a candy kiss, carefully press down firmly.
Remove cookies from cookie sheets, cool on racks.

They are called Beat the Clock cookies because I used to set the timer for the baking time and when it got down to about 2 minutes left, I would divide the Hershey kisses among the kids and get them to unwrap the kisses before the timer went off.
Two bird, one stone. Kids had fun, I got kisses unwrapped!
