Waffles
4tbsp. starter (stored in fridge)
2 c. flour
2 c. milk
3 tbsp. sugar
1/2 tsp. salt
4 tsp. oil
3 eggs separated – add yokes

Bread Dough
1 c. starter (waffle batter)
2 c. warm water
1 Tbsp. yeast
1/3 c. sugar
Mix 10 minutes in bread mixer then add:
1-1/2 tsp. salt
5 c. flour (about)

Mix starter, flour and milk and let set in a covered bowl for 8 hrs. or overnight. Next morning- DON'T FORGET- first scoop out 4 Tbsp. starter and save in your fridge for next time. I rinse and leave my little jar by the bowl so I don't forget. To batter add sugar, salt, oil and yolks and mix well. Beat egg whites in separate bowl and add 1 heaping tsp soda, then fold in to batter. Cook on heated waffle iron of your choice. Serve with syrup, we love peanut butter on ours. They are also great with strawberries and cream, peaches and cream etc. This makes wonderful whole wheat waffles too. Use leftover batter to make bread of your choice below.

SOUR DOUGH BREAD (Rolls, pizza dough, bread sticks, loaves)

After breakfast use left over waffle batter to make bread. Add yeast, warm water and sugar in mixer to batter, let bubble then add 2-1/2 c. flour and mix well. Now add salt and the rest of the flour to make a soft dough. Knead well, then let rise. Punch down and shape 2 loaves, 8-12 for bread sticks or rolls. Let rise and bake at 350º for 25 minutes.

I have had my same sour dough start at least 40 years. I got it from my dear friend Deanna Farr. Rumor has it this batch crossed the plains. If you don't have a start you can make your own from flour and water- check the internet.
