1 Tbsp. yeast
1/4 c. warm water
1/4 c. oil
14 c. sugar
1 tsp. salt
1 c. scalded milk
1 egg
3-1/2 c. flour
1 c. mashed potatoes

Directions:
Directions:
In a small bowl mix yeast in warm water and let rise. Prepare instant mashed or use left over mashed potatoes. Warm milk in a pan and let cool. In Mixing bowl place potatoes, oil, sugar, salt and milk. Blend well, add egg and blend again. add yeast mixture. Add flour enough to make a soft dough. Let rise till double. Shape into rolls and place on greased cookie sheet or cake pan. Let raise once. Keep dough soft and don’t knead. This makes rolls tender.

Aunt Renee' only had a tiny kitchen and a small counterspace but she loved to cook and was famous for many of her recipes including her feathery light rolls. She made them in to hamburger buns too. I remember sitting on a pan as a booster seat eating homemade bread toast and homemade cocoa at her house.
