Grandma's Greek Dolmades Recipe

1 Jar of Grape Leaves
2 lbs. Ground Beef or Lamb
1 cup Minute rice or pre-cooked rice
½ cup Pine Nuts
1-2 Bunch of Green Onions
¼ cup grape juice or red wine
¼ cup Currants(soak these in the juice or wine)
⅛ cup Olive oil
1 TB Parsley (fresh if possible)
2 TB Dill(fresh if possible)
Salt and Pepper to Taste
1 Lemon (juice the Lemon)
1 Small can of Tomato Sauce

Directions:
Directions:
Remove grapes from jar carefully and scald with hot water and drain. Place on wax paper shiny surface down. In a large skillet saute' chopped onions and parsley in 4 TB's oil. Add meat and brown. Next add minute rice (or pre-cooked rice), dill, pine nuts, currants, grape juice, tomato sauce, and salt and pepper to taste. Simmer for five minutes and remove from heat.

Place on tablespoon of meat mixture in the center of the grape leaves. Remove any stem. Fold the end of the leaf over the filing. Fold all sides of the leaf over the meat until in a perfectly tucked roll. It should be a cylinder about 2 inches long. Arrange the stuffed leaves in layers in a pot. Juice the lemon over the rolls. add a fourth a cup of water over all the leaf rolls and place a plate over all the leaves to weigh them down and to allow the steam to escape. If you are using minute rice increase the water by a quarter cup. Place the pot on the stove at low heat and simmer the rolls for twenty minutes or until the minute rice is done and leaves are done. Remove from the heat. Drain all water and allow them to cool for an hour before serving. Can be refrigerated and eaten whenever ready. Yum!
