250 g/2 cups rice noodles
180 g/¾ cup tofu
2 Tbsp olive oil
1 onion
3 cloves of garlic
2 centimeters of fresh ginger
1 zucchini, carrot, and pepper
2 Tbsp soy sauce
1 Tbsp maple syrup / sugar
Chives, roasted cashews, and lime juice

Directions:

Pour boiling water into a pot, put pasta in portions, stir and leave for about 8 minutes. After this time, drain the pasta and set it aside.

Dice tofu, zucchini, onion, garlic and ginger into small cubes. Fry in a pan with olive oil. Cut the carrots and peppers into thin strips and add them to the pan, fry them until soft, stirring occasionally. Add pasta, lime juice, soy sauce and maple syrup / sugar to the vegetables in the pan. Mix everything thoroughly. Put it on a plate. Garnish with cashews and chives
