"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Directions:
Mix the dough ingredients(flour, sugar, oil, water, salt and yeast) and knead for 7-8 minutes. The dough needs to be a little firm. Cover them with a cloth and wait 10 minutes. Divide the dough into four pieces. Make rolls 15-20 cm long. Leave them on the board and wait 10 minutes again.Brush the dough board with oil and stretch the rolls to about 80 cm. They must be thin. Then fold them in half and then roll them up like braids.

Dip the finished "braids" in water and then in sesame seeds. Put on a buttered baking tray. Preheat the oven to 40 C/100 F and switch it off. Put the tray in, close the oven and wait 20 minutes. Remove the tray. Preheat the oven to 220 C/425 F and put the tray back in. Bake until brown for about 10 minutes.
