(6) 10 ounce boxes or (5) 15 ounce bags of frozen chopped spinach
30 cloves garlic, peeled and crushed
2 sticks butter
2 tablespoons olive oil
6-8 cups Cheddar cheese, shredded
1/2-3/4 cup grated Pecorino Romano cheese
Sea salt and Black pepper to taste

1. In large pot, cook frozen spinach according to package directions.

2. Drain spinach and squeeze/press out all excess water.

3. Return drained spinach to pot. Turn stove to medium-high heat.

4. Add butter and olive oil. Stir until butter sticks have melted.

5. Add crushed garlic to pot and cook for 1 minute. Stirring constantly.

6. Add 1/2 of the shredded cheese, stirring continually until cheese is incorporated.

7. Add 1/2 cup of grated cheese and stir. Taste.

8. Add remaining shredded cheese, grated cheese, and salt and pepper as needed.
