Tropical Bread Pudding Recipe

6 oz Fresh bread, sliced into ½ inch cubes
3 medium bananas, sliced
½ c flaked or shredded coconut
1 Tbsp lemon juice
4 eggs
⅓ c brown sugar, firmly packed
1½ c half-and-half
1 c milk
1 tsp vanilla
powdered sugar

1. Pre-heat oven to 400º. Arrange half of the bread in bottom of greased 9 inch square baking pan.

2. In a small bowl toss bananas, coconut, and lemon juice. distribute evenly over bread layer. Top with remaining bread pieces.

3. In mixing bowl beat eggs and brown sugar. Beat in half-and-half, milk, and vanilla, blending thoroughly.

4. Pour mixture over bread and lightly press down to fully saturate.

5. Bake for 45-55 minutes, or until bread is browned and custard is set.

6. Cool slightly and dust with powdered sugar.

7. Serve warm. Top with whipped cream or vanilla ice cream, if desired.
