1 tbsp. yeast
1 tbsp. honey
1 tbsp. olive oil
½ tsp. salt
1 cup water
2 ½ - 3 cups flour
1/8 cup baking soda
4 tbsp. butter

Directions:
Directions:
Mix yeast, honey, olive oil & water well, and let stand for 5-8 minutes to allow the yeast to activate. Mix salt & flour in with the yeast mixture and mix well – the dough should be slightly sticky to touch but not come off on your finger when you touch it. Remove from mixing bowl and place in a greased bowl to rise (rise as long or little as you want).

Put a large saucepan on the stove filled ¾ full with water, bring to boil. Roll dough into ½ inch thick ropes. Add baking soda to boiling water (it will foam up) Cut ropes into 1-inch pieces and put them into the boiling water with baking soda. Boil for about 20-30 seconds, remove with a strainer, and place on a cooling rack to drain for a couple of minutes. (the bites will rise when placed in the hot water) Put the pieces onto a warmed cookie sheet and bake at 375 degrees for 10 minutes (or until golden brown) Remove from baking sheet and baste well with butter. Sprinkle on favorite toppings (seas salt, sugar/cinnamon, etc.)

For Crispier Pretzel Bites: Bake after basting with butter for another few minutes. Remove from oven add more butter and sprinkle/toss with salt or cinnamon/sugar.
