1 ¼ cups (2 ½ Sticks) Unsalted Butter softened
2 cups Sugar
2 Eggs
2 Tsp Vanilla extract
2 cups All Purpose Flour
¾ cup Cocoa Powder
1 tsp Baking Powder
1 tsp salt
2 cups mint chips

Directions:

Heat oven to 350º In a large mixer bowl beat butter and sugar until light and fluffy. Add eggs and vanilla; beat well. In a separate bowl, stir together flour, cocoa powder, baking soda, and salt; blend into butter mixture. Stir in the mint chips. Using an ice cream scoop drop dough onto ungreased cookie sheet. Bake 12 to 14 minutes or until set. Cool slightly the remove from cookie sheet to wire rack. Cool completely.
