turkey carcass
2 quarts water
1 medium onion in wedges
1/2 t salt
2 bay leaves
1 c chopped carrots
1 c uncooked long grain rice
1/3 c chopped celery
1/4 c chopped onion
1 can cream of chicken or mushroom soup

Directions:
Directions:
Boil carcass with water, onion & bay leaves. Simmer for 2 hours. Remove carcass and cool. Strain the broth and skim the fat. Discard onion and bay leaves.
Return broth to the pan.Add all other ingredients except the soup. Cover and simmer until rice and vegetables are done,
Remove turkey meat from the bones and cut into bite size pieces. Add turkey and soup and heat through.

We had a turkey breast, so I used chicken stock to cook the vegetables and added chopped turkey and soup. It was good this way also, but boiling the turkey carcass was probably the best.
