30 California pitted prunes (about 1 cup packed)
1/3 cup almond butter
2 tbs honey
1/2 cup rice crisp cereal
1/4 cup unsalted roasted sunflower seeds
1/3 cup unsweetened dessicated coconut
*** optional add in a sprinkle of hemp hearts, flax seed or chia seeds
or for an extra treat 1 tbs mini chocolate chips

Directions:
Directions:
Pulse prunes with almond butter and honey in a food processor until finely chopped.
Transfer to bowl and stir in rice crisp and sunflower seeds and mix well. Scoop level tablespoon full and form into balls and roll in coconut. Transfer to airtight container and let set up in fridge. Will keep up to 1 week, or freeze and keep up to 1 month.
