1 (8 oz.) package cream cheese
1/4 c. butter, softened
1 (2 pound) package powdered sugar
1/4 - 1/2 tsp. peppermint extract
gel food coloring

Directions:
Directions:
Cook cream cheese and butter in a saucepan over low heat, stirring constantly until smooth. Take off heat and add peppermint extract and food coloring. Stir well. Gradually stir in powdered sugar. Roll dough on mat or counter sprinkled with powdered sugar. Cut with small cookie cutters or roll in small round balls. Press out balls with a fancy glass dipped in powdered sugar. Let stand, uncovered, for 4 hours or until firm. Freeze if desired. Makes 8 dozen normal size mints.
