1 cup grated carrots
1/2 cup grated onion
1 cup grated celery
6 cups water
2 cans cream of chicken soup
2 cups milk
1 cup butter
1 cup flour
2# velveeta, cut into small pieces
1 tsp salt
1/2 tsp white pepper
1 cup Rotel tomatoes

Directions:
Directions:
In a large pot, mix 1st 5 ingredients and boil until tender.
Once tender, add milk to pot.
In a medium skillet, melt butter and then gradually add in the flour until smooth.
Gradually add mixture in skillet to the pot.
Mix well and cook on low until mixture is smooth.
Once mixture is smooth, add the last 4 ingredients and cook on low until all cheese is melted.
