Ingredients: 1 1/2 cup whole red candied cherries 1 1/2 cup whole green candied cherries 3 c diced candied pineapple 1 lb walnut halves 10 oz golden raisins 1 c shortening (I used lard) 1 c sugar 5 large eggs 4 T vanilla extract 3 c all purpose flour 3 t baking powder 1 t salt

Directions:Preheat oven to 300º. Grease and flour 10 inch tube pan. Combine fruit and nuts in a large bowl for later.
In another bowl, cream shortening and sugar until light and fluffy. Beat in eggs and vanilla. Combine flour, baking powder and salt. Add to creamed mixture and mix well. Pour over fruit and nuts; stir to coat.
Transfer mixture to prepared pan. Bake until a toothpick comes out clean, about 2 hours. Cool 10 minutes. Remove to a wire rack to cool completely. Wrap lightly and store in a cool place. Bring to room temperature before serving. Slice with a serrated knife.

Notes: I used my cast iron 10 inch tube pan. It is small so the overflow went into a cast iron loaf pan. We filled them to the same depth. The bake time was much less and the crust was nice. I used rum icing on this, I mixed Myer rum and confectioners sugar and drizzled it over the cakes.
I made this for James Almond in 2020 at his request. He approved.
