Nutty Shortbread Crust
½ cup butter, room temperature
1 cup almonds, finely chopped (may use other nuts such as walnuts or pecans)
1/2 cup powdered sugar
1 cup flour

Layer 2:
16 oz. cream cheese, room temperature
8 oz. whipped cream (need a total 16 oz whipped cream divided)
1 cup powdered sugar

Layer 3:
2 small pkg. (3.9 oz each) instant chocolate pudding
3 cups cold milk

Layer 4:
8 oz. whipped cream (need a total 16 oz. whipped cream divided)

Topping:
chocolate toppings such as chocolate chunks or curls, nuts or oreos

Preheat oven to 425º F. Mix butter, nuts, powdered sugar & flour in bowl. Press into a 9" x 13" baking dish. Bake 425º for 15 minutes. Let it cool completely before putting the next layer on. In a bowl, use a hand mixer to mix cream cheese, whipped cream (half or approx 8 oz.) and powdered sugar together. Blend until ingredients are evenly distributed. Do not overmix. Layer over the cooled nutty shortbread crust. For layer 3, combine instant pudding packages and cold milk. Prepare according to package directions for PIE directions. Top with remaining whipped cream. Sprinkle toppings to make the dessert look delicious with things such as chocolate curls or chocolate chunks and nuts.

This is one of my mom, Janis Winkler's favorite desserts. We enjoy the almond crust the most. Try a festive twist by adding crushed peppermint candy on top or changing the pudding flavor or adding fruit such as berries or bananas.
