1 carton of Lite frozen whipped topping, thawed
1 package of Instant pistachio pudding mix
3 cups Mini marchmallows
1 can(20 oz) Crushed pineapple, undrained
½ Chopped pistachios or walnuts

Directions:
Directions:
In a large bowl, combine whipped topping, and pudding mix. Fold in the marshmallows and pineapple. Cover and refrigerate for at least 2 hours. Just before serving, sprinkle with 'gold' (the nuts) so the kids will know the leprechaun came.

I loved making the Leprechaun salad with you each year. Brad loved how it turned green when mixed. You can add a drop of green food coloring if you want it really green.
