4 cups Chicken Broth
1 Whole Scallion
2 Stalks of celery
1 large egg
¼ frozen peas if desired

Directions:

Skim fat from chicken broth if there is any and bring to a boil in a sauce pan. Chop the celery stalks in small pieces and the scallion as well. Add to the broth and simmer in the broth for 10 minutes. Crack the egg into a bowl and beat well. With the broth at a boil add the egg into the broth a little at a time stirring as adding to make the egg separate into shreds. Let the egg cook for a couple minutes in the soup and serve. This is a great soup for a sick person. You can add a few frozen peas at the end if desired.

Grandma always made this for us when we had a sore throat and were not feeling well. It is good for someone who is needing calories but has an upset stomach. It works wonders.
