1 cup cornmeal
1 cup all-purpose flour
⅓ cup sugar
½ tsp. salt
2 tsp. baking powder
1 egg
¼ cup vegetable oil
1 cup milk

Directions:
Directions:
Preheat oven to 400º. Grease a cast iron skillet or a 8X8 pan. In a batter bowl mix together the cornmeal, flour, sugar, baking powder, and salt. Add the egg, oil and milk; stir gently to combine. Pour batter into the well greased skillet or pan. Bake in preheated oven for 20 to 25 minutes or until toothpick comes out clean. Best served warm.
