Apple Pie

1¼ cups all-purpose flour
1 tsp granulated sugar
½ tsp salt
½ cop cold unsalted butter, cubed
3 to 4 Tbsp cold water

Crumble:
½ cup large flake oats
½ cup all-purpose flour
¼ cup brown sugar
¼ tsp salt
½ cup cold unsalted butter, cubed

Filling:
5 Gala or Honey Crisp apples, cored and sliced (6 cups)
½ cop brown sugar
½ tsp cinnamon
⅛ tsp cardamom
⅛ tsp salt

Directions:
Directions:
1. Whirl 1¼ cups flour with sugar and salt in food processor. Add ½ cup butter. Pulse until crumbs form. With the machine running, add water 1 Tbsp at a timeuntil dough comes together, about 30 seconds. Flatten into a disc, wrap in plastic and refrigerate a at least 30 minutes.
2. Place a 9 inch pie plate on a baking sheet. Pre-heat oven to 375ºF.
3. Stir oats with flour, brown sugar and salt. Add butter and work in with fingertips until crumbly.
4. Toss apples with brown sugar, cinnamon, nutmeg, cardamom and salt until evenly coated. Add half the crumble mixture and toss until combined.
5. Roll out the pastry disc on a lightly floured surface into a 13 inch circle. Press into pie pan,leaving a 1 inch overhang. Tuck edge under itself and crimp using your index finger and thumb.
6. Scrape apple mixture into pastry. Sprinkle remaining crumble mixture on top.
7. Bake in lower third of the oven, covered with foil, for 20 minutes. Remove the foil and bake another 40 to 50 minutes until golden. Transfer to a rack to cool completely. Serve with vanilla ice cream or vanilla custard.
 

Vanilla Custard

1/2 cup granulated sugar
4 egg yolks
1 Tbsp cornstarch
1 1/2 cups 2% milk
1 tsp vanilla

1. Whisk sugar with yolks in a large bowl until pale and fluffy, about 1 minute. Whisk in cornstarch until combined
2. Heat milk in a medium saucepan until it starts to simmer. Slowly pour hot milk into yolk mixture, whisking constantly until combined. Pour mixture back into saucepan and set over medium low. Continue cooking, stirring constantly with a wooden spoon, until mixture has thickened and coats the spoon, 8 to 10 minutes.
3. Strain through a fine sieve. Stir in vanilla. Press a piece of plastic wrap on the surface and refrigerate until cold.
