Heat in a skillet or wok
3 T. vegetable oil
Stir fry in it briefly
½ c. finely chopped celery
¾ c. shredded cabbage
4 finely chopped scallions
Add and stir for 3 minutes
1 c. diced cooked meat of your choice
Add and stir fry 5 more minutes
½ c. drained finely cut water chestnuts
½ c. bean sprouts
1 minced clove garlic
¼ c. soy sauce
Grating of ginger root
½ t. sugar

Directions:

Cool the filling. Place 4 T. in a egg roll wrapper and seal the flap with a paste made of 1 T. flour and 2 T. cold water. Fry until golden brown.
