Ingredients: 2 lbs. roast beef 2 large potatoes 2 small onions salt/pepper
Crepes: 1 1/2 cups flour 3 eggs 3/4 cups milk (dairy free) 3/4 cups water 1/4 tsp salt 3 tbsp butter melted

Directions:Sauté the onions. Grind the meat and onions together.
Mash the potatoes and mix with the remaining ingredients
Cook the crepes by mixing all the ingredients until smooth. Spoon about 1/4 cup of batter and pour onto a oiled griddle/fry pan. Swirl around so the batter forms a round shape. Cook for about 2 minutes on both sides.
Put aside to cool. Once cooled, put about 1 tbsp of filling in the center and fold the crepe to form an oblong. About 1" x 2" each. Put these on a cookie sheet and freeze. Once frozen, remove from cookie sheet a put in a plastic bag in the freezer for later use.
To cook the knishes, remove from the freezer and put on a cookie sheet. Brush with melted butter (non dairy). Bake at 350º for 20 minutes until browned.
The filling can be meat, potato or cheese. Grandma used to save different types of leftover beef and then grind it together when she had enough.

Notes: These are time consuming to make but well worth it. It's tempting to add a lot of filling but they come out better if you don't overstuff the crepes.
