4-5 large russet potatoes
4 tbsp butter
8 large eggs
6-8 strips of bacon
2 handfuls of shredded cheese
1/2 onion (optional)

Seasoning:
Salt
Pepper
Garlic Salt or Powder

Directions:
In large skillet, cook bacon well done. Remove from the skillet once cooked and place on plate + paper towel for later use.

Dice up onion and cook in bacon greese until tender.

Dice up potatoes into small cubes and add it to the skillet. Add in butter to potatoes. Season with garlic salt/powder, salt, and pepper to preference. Cover and cook on medium/high until potatoes are fork tender. Mix every 5 minutes or so.

Once potatoes are cooked, crack eggs in a separate bowl, and a splash of milk, and scramble. Add egg mixture to the skillet and mix in with potatoes. Cover and let cook for approx 3 minutes before mixing again.

Once eggs are cooked, cut bacon strips to small pieces or crumble into pieces and add it to the skillet. Mix the bacon in. Add shredded cheese on top and cover so cheese can melt for approx 2-3 minutes.

Season one more time with garlic powder/salt, salt and pepper.

Serve with toast, biscuits, or pancakes.

I like to also add sausage sometimes.

For healthy option, substitute Brussel sprouts for potatoes and fry eggs.

Also good with over easy eggs instead of scrambled. Best way would be to create openings in the potatoes and crack eggs directly into those openings on the skillet.
