6 quarts beets
2 cups vinegar
2 cups water
1-1½ cups sugar
1 tbsp mixed pickling spice plus 2 whole cloves

Directions:
Directions:
Combine vinegar, water, sugar and spices (which have been tied in a cheese cloth bag). Bring to a boil in a large pot for 5 mins. Set aside over night. Boil whole beets until tender. Drain and slip off skins and slice or cut in half the larger ones. Simmer beets in syrup for 15 minutes. Pack in sterilized jars overflowing with syrup. Seal and store in a cool place.

This was our Mom’s recipe (Esther Maria Rickard) and one that I make every year. Wear rubber gloves to avoid beet stained fingers.
