1lb hot sausage
1lb mild sausage
4 cups bisquick or jiffy baking mix
4 cups course shredded sharp cheddar

Directions:
Directions:
Combine the sausages in a jumbo mixing bowl by hand. Letting the sausage warm before mixing will make this easier. Add the baking mix in two separate batches, mix by hand. Fold in the cheese in two separate batches.

Preheat oven to 350° Roll the mixture into 1" diameter balls and place on parchment lined baking sheets. 2 dozen per sheet. Your oven will probably be hot after you finish the 1st 2 pans. Bake for 11 minutes. Do not over cook. While the 1st 2 pans are cooking it gives you time to do the rest. Remove the sausage balls from the pan immediately after removing from the oven. I slide the parchment paper off of the pan directly to the countertop and allow them to cool. Repeat with the remaining pans.
