2 cups all-purpose flour
1 tablespoon sugar
1 1/2 teaspoons salt
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 cup light butter (canola oil blend) cold
1/2 cup buttermilk
1/4 cup skim milk
Gravy:
1 lb pork sausage
1 small onion, small diced
4 tablespoons all-purpose flour
3 cups skim milk
1 dash hot pepper sauce (1 to 2) (optional)
fresh coarse ground black pepper

Preheat oven to 400ºF. Mix together flour, sugar, salt, baking powder, and baking soda in a medium bowl. Slice cold butter into cubes and use a pastry knife to cut butter into dry mixture until no large chunks of butter remain. Add buttermilk and milk and stir until dough forms. Spoon into greased muffin cups (paper liners stick too badly). Bake for 20 to 24 minutes or until tops begin to turn light brown. Remove biscuits from the oven and cool for a couple of minutes, then brush each biscuit top with melted butter.
Heat a 10″ to 12″ skillet over medium high heat and add sausage. Break up sausage with a wooden spoon. Add onion after a minute or two. Once cooked, use a teaspoon to heavily dust the sausage with flour. Stir to incorporate the flour. Once the flour has turned a very light brown (about 2-3 minutes) add milk and bring to a boil. Turn heat to medium and continue to stir, it should thicken up quite quickly. If the gravy seems too thick, add more milk. Stir and serve immediately.
