1 Peck green tomatoes sliced
1-1/2 cup salt, sprinkled over the tomatoes at night
Drain off in the morning

1 quart vinegar
2 cups water

3 quarts vinegar
3 pounds sugar
3 tbsp each of cloves, allspice and cinnamon
2 tbsp ginger
1 tbsp mustard seed
2 chopped green peppers
2 cups chopped onion (optional)
Directions:
Directions:
Once you have drained the green tomatoes in the morning, mix one quart vinegar plus 2 cups of water. Pour over the tomatoes and boil for10 minutes. Now drain away the liquid.

Now add the 3 quarts vinegar, sugar, spices and mustard seed to the tomatoes along with the green peppers and onions Boil until the mixture is thoroughly cooked.

Pour into sterilized jars and process in a boiling water canner for 15 minutes.
