1-2 jalapeno peppers
1/2 Spanish onion
1 red pepper
1 can chopped green chilies
1 can tomato paste
3 cloves garlic
1/2 cup red wine vinegar
2 tbsp chili powder
3 tbsp lime juice
56 oz tomatoes (3-1/2 pounds)
2 tbsp sugar
1 tsp salt
1 tsp oregano
1/2 tsp hot sauce
1 tbsp fresh parsley

Directions:
Directions:
Peel, chop and mince all ingredients except for the parsley and put in a large cooking pot on high until it comes to a boil, reduce to medium and cook. Stir frequently and cook for about 35 minutes. Now stir in the parsley.

Pour into sterilized jars and process in a hot water bath for 15 minutes.

Wear gloves when chopping hot peppers. This is a mild sauce. We have added a variety of peppers over the years altering the hotness of the sauce. We have also added mango, black beans, corn etc. This is a recipe that can be changed and still comes out great.

I always double this recipe because I like to make lots of salsa.
