Pound Cake

1 c butter softened

2 c white sugar

4 eggs

1 tsp vanilla

3 c all purpose flour

1/2 tsp baking powder

1/2 tsp salt

2 c fresh peaches (pitted and chopped)

Directions:
Directions:
Preheat oven to 375ºF

Butter a 10" tube pan and coat with white sugar. In large bowl, cream together butter and sugar until fluffy. Add eggs one at a time, beating well each egg. Add vanilla.

Reserve 1/4 cup of flour. Sift together remaining flour baking powder and salt. Gradually stir in cream mixture.

Use reserve flour to coat the chopped peaches, then fold the floured peaches into the batter. Spread evenly into prepared pan.

Bake for 60-70 minutes in preheated oven or until toothpick comes out clean.

Allow to cool in pan 10 minutes before inverting onto wire rack.

2 tsp cornstarch

Directions:
Directions:
Puree some peaches, add 2 tsp cornstarch and cook on low until thick.

Serve over cake.
