4-6 cornish hens or quails

1-2 celery stalks, chopped fine
2 onion or shallot, diced
1 package of croutons
16 oz. chicken broth
good handful of parsley, chopped
rosemary- strips to place in roasting pan

Directions:
Directions:
Saute celery and onion in EVOO. Mix in croutons and chopped parsley and enough chicken broth to moisten the mixture.

Prep the hens or quails. Wash and dry with paper towel. Season with salt and pepper.
Stuff the hens and brush with EVOO. Place in roasting pan, with rosemary and roast uncovered at 400 degrees F until cooked. Let rest for 15 minutes and serve.

Everything Mommy made was delicious, no matter how simple the ingredients were-- Stuffed Cornish Hens or quails are a perfect example of how few ingredients turned into a decadent meal. Cornish hens were indeed a treat! Having an individual hen on a plate always made me feel so special! A meal for a queen!
