1 c (2 sticks) margarine or butter, softened

1 c brown sugar, firmly packed

1/2 c granulated sugar

2 eggs or 4 egg whites

1 tsp vanilla

1 1/2 c all purpose flour

1 tsp baking soda

1 tsp ground cinnamon

1/2 tsp salt (optional)

3 c quick or old fashioned oats, uncooked

1 c raisins

Directions:
Directions:
Heat oven to 350ºF. Beat together margarine and sugars until creamy.

Add eggs and vanilla; beat well.

Add combined flour, baking soda, cinnamon and salt; mix well.

Stir in oats and raisins. Drop by rounded tablespoonfuls onto ungreased cookie sheets.

Bake 8 to 10 minutes for a chewy or 11 to 12 minutes for a crisp cookie.

Cool 1 minute on cookie sheet.; remove to wire rack. Cool completely
