4 large eggs
1/4 cup diced green onions
1 lb boneless chicken breasts or boneless thighs
1/2 tsp salt
1/4 tsp black pepper
1 tbsp veg oil
2 tbsp soy sauce
1 1/2 tsp sesame oil
2 tbsp butter
1 pkg (12 oz) frozen peas and carrots
5 cups of cooked rice (cooled)

Directions:
Directions:
Cook rice according to box directions and set aside in refrigerator to cool.
Dice green onions and set aside (may do a little extra to garnish top when done)
Beat eggs with a for in a small bowl. Set aside.
Cut chicken into small bite sized pieces, removing fat. Add salt and pepper and mix.

In large skillet, put small amount of veg oil and cook chicken on medium high until meat is done. Remove chicken from skillet. Wipe skillet out with paper towel. Add small amt of oil if needed. Scramble eggs until no liquid. Put eggs on top of chicken. Wipe out skillet. On medium heat, melt butter in skillet. Pour rice into skillet. Let cook 2 min. without stirring. Stir and cook 2 more min. Add peas and carrots, soy sauce, and sesame oil. Stir and heat until warm. Add chicken and egg mixture. Heat till warm. Add green onions and stir again. Add soy sauce to your taste.
