Bones and trimmings from 1 turkey or 3 1/2 lb chicken (cut up)
8 cups water
3 chicken-flavor bouillon cubes or 3 tsp chicken flavor instant bouillon
1 tsp salt
1/4 tsp poultry seasoning or sage
1 bay leaf
1/2 cup barley **
1 1/2 cups sliced carrots ***
1 cup chopped onions
1 cup sliced celery
2 tbsp chopped fresh parsley, if desired

Directions:

In 5-qt Dutch oven or large pot, combine turkey bones and trimmings, water, bouillon, salt, poultry seasoning and bay leaf. Bring to a boil. Reduce heat. Cover; simmer 1 1/2 hrs. Remove bones from broth. Remove turkey from bones. Strain broth; skim off fat. Return turkey to broth. Stir in carrots, onions and celery. Simmer covered an additional 15 minutes; add noodles and simmer an additional 10 - 15 minutes or until vegetables are tender. Stir in parlsley if using.

** Or 1/2 cup uncooked rice, or 1 1/2 cups egg noodles (I use noodles)
*** You can also add corn, peas, potatoes with the carrots and celery

This recipes originally called for barley which I have used but I prefer noodles. Potatoes are good also!
