2 slices toast
2 slices butter
about 3/4 C Sharp Cheddar cheese (don't use processed cheese like Kraft or Cheese Whiz
about 1/4 c to 1/3 c milk (maybe a tad more)
1 Tbsp beer (optional)
1 Tbsp mustard (optional)

Directions:
Begin toasting your bread. Then, with a heavy frypan, melt butter until it's bubbly and start adding thin slices of cheese, a few at a time, over med. heat. Keep stirring cheese and butter until it's fully incorporated. Crank up the heat a bit but watch the butter and cheese so it doesn't burn.

When cheese is almost entirely melted, add milk and whisk everything together. Add beer and mustard at this time if desired. Butter the toast and pour the cheese mixture on top of toast. Salt and pepper to taste.

I had this at my grandma's so often I thought it was an American staple. The first time I fixed this for Rick, he wrinkled his nose. But now his eyes light up and he smacks his lips.
