1/2 cup Raisins
1/4 cup Brown Sugar

This is a quick salad that we had regularly in year’s past, but less so in recent years - I think because we realized Clare and I don’t really like raisins!

But it is a nice cool, crisp foil to the rest of the rich meal.

Put the raisins in a small bowl, add the brown sugar, and cover with a good amount of OJ. You are rehydrating the raisins for the salad. Also, can cover the raisins with boiling water for 5 minutes first, then drain and cover with Orange Juice, to provide a nicer texture.

Core the apples and cut into small chunks. Immediately stir in a little orange juice to cover all the cut edges - this will eliminate browning.

Stir in the sweet raisin mixture and mix well. Serve in small bowls - the white ‘tulip’ bowls are traditional.
