One recipe of Easy Mac&Cheese with Velveeta, unbaked, deep 9X13 baking dish. Use Monterrey Jack/Cheddar version of shredded cheese.
1 lb ground beef, crumbled and browned
1 pkg taco seasoning
19 oz can of enchilada sauce
4.5 oz can of green chilies
4 TBSP butter, melted
2 TBSP sliced green onions, thinly sliced

Directions:
Directions:
Preheat oven to 350º. Set aside prepared Mac&Cheese layer. Mix together ground beef, taco seasoning, butter, chiles and enchilada sauce. Gently spoon meat mixture on top of Mac layer. Bake 28-35 minutes, until bubbly around the edges. Remove from oven, sprinkle remaining cheese and then green onion on top. Return to the oven until cheese melts.
