2 lb. small red potatoes, quartered
3 c. fresh or frozen peas
1 c. water
2 tbsp. chopped onion
2 tbsp. butter
3 tbsp. plus 1 tsp. all-purpose flour
1-½ tsp. salt
¼ tsp. pepper
2 c. 2% milk
1 c. half-and-half cream
Directions:
Directions:
1. Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce
heat; cover and simmer for 8-12 minutes or until tender. Drain.
2. Meanwhile, place peas and water in a small saucepan. Bring to a boil. Reduce
heat; cover and simmer for 3-5 minutes or until tender. Drain.
3. In a large saucepan, sauté onion in butter until tender. Stir in the flour, salt and
pepper until blended; gradually add milk and cream. Bring to a boil; cook and stir
for 2 minutes or until thickened. Stir in potatoes and peas; heat through.
