¾ cup butter, softened
⅔ cup powdered sugar
½ tsp. vanilla extract
½ tsp. baking soda
1 ⅔ cups sifted flour
½ cup chopped macadamia nuts
1 egg yolk
½ cup sugar (raw)

Directions:
Directions:
Cream butter with powdered sugar and vanilla until light and fluffy. Sift flour and baking soda and add to creamed mixture along with macadamia nuts. Mix until smooth. Divide into three parts and roll into logs 1 inch in diameter using waxed paper. Refrigerate until firm. Unwrap the rolls and brush with beaten egg yolk, and then roll into raw sugar crystals. Chill briefly until firm. Slice the rolls into ½ inch thick slices and place on greased baking sheets. Bake at 400 degrees for about 8-12 minutes or until edges are golden. Remove to rack and cool. Makes 5 dozen cookies
