30 oz Frozen Shredded Hash Browns
1 cup Sour Cream
2 cups Shredded Cheddar Cheese
2 lbs Sausage ; hot or mild
10 oz Can Cream of Chicken Soup
8 oz French Onion Dip
1 cup Chopped Onions
1/4 cup Green and Red Bell Peppers ; optional

Directions:

Preheat oven to 350.

Brown breakfast sausage, drain, and set aside.

In a large bowl combine cheese, cream of chicken soup, sour cream, french onion dip, chopped onion, and salt and pepper (to taste).

After the sauce is mixed thoroughly fold in shredded potatoes.

Lightly coat a 9x13 baking dish with non stick spray and press 1/2 of the potato mix in to the bottom. Make sure the mixture is even in thickness, evenly distribute sausage to the top of potato mix. Add the rest of the potato mix to the top of the sausage, and cover the entire casserole with remaining sausage.

Bake at 350 for about an hour or until casserole is golden brown.
