1/4 cup salted butter
1 med onion chopped
2 lbs baby Bella mushrooms sliced
1 tbsp sherry wine (can substitute with Mirin)
4 tbsp flour
5 cups water
5 tsp “better than bouillon”. (Mushroom bouillon preferred, but beef or chicken work as well)
1 - 2 tsp thyme
1/2 tsp chopped or minced garlic
1 cup heavy cream
1 tsp seasoned Salt

Directions:

Turn on Sauté function on your Instant Pot
Melt butter.
Add mushrooms and cook for 10 minutes
Add Sherry or Mirin and cook for 3 minutes
Spoon out and Reserve 1 1/2 cups of the Mushrooms
Add onions and sauté for 5 minutes
Add flour and sauté until flour is cooked (5 minutes)
Add Thyme and Garlic. Cook for an additional 5 minutes.
Add water and Bouillion.
Pressure cook in Instant Pot for 10 minutes on high, then quick release.
Blend contents with an immersion blender or Vitamix until smooth
Add reserved mushrooms, heavy cream and Seasoned Salt and cook until hot.
