4lbs beef short ribs (about 8 pieces)
½ cup all purpose flour
¼ teaspoon ground black pepper
6 pieces of thick cut bacon, diced
2 tablespoons of olive oil, if needed
2 carrots, diced
2 celery stalks, diced
1 medium onion, diced
4 cloves of garlic, minced
1 tablespoon tomato paste
1 cup red wine
2 cups beef broth
2 sprigs fresh rosemary
2 sprigs fresh thyme
1 bay leaf

Directions:
Directions:
Put the flour in a bowl with spices. Spice the ribs with salt and pepper. Dredge the ribs in the flour mixture. In a pressure cooker on saute mode, cook the bacon. Remove the bacon to a plate. Working in batches of 3-4, brown the short ribs on all sides using the olive oil if needed. Set aside. Add the carrots, celery and onions to the pot. Add the garlic and tomato paste and mix. Return the ribs and the bacon to the pot. Deglaze with the wine, making sure to scrape up the brown bits with a wooden spoon. Add the rosemary, thyme and bay leaf. Cover and cook on high for 40 minutes with natural release. Serve over mashed potatoes.
