3 cups hot cooked rice
1lb lean beef round steak cut 1/2 inch thick
1 tablespoon paprika
2 tablespoons butter
2 cloves of garlic, crushed
1½ cups of beef broth
1 red bell pepper cut in strips
1 green bell pepper cut in strips
½ yellow onion cut into strips
sliced mushrooms (optional)
2 tablespoons of cornstarch
¼ cup each water and soy sauce

While rice is cooking, pound steak into ¼ inch thickness. Cut into ¼ inch wide strips. Sprinkle meat with paprika and allow to stand while preparing other ingredients. Using a large skillet, brown meat in butter. Add garlic and broth. Cover and simmer for 30 minutes. Stir in onions and peppers (add mushrooms if wanted). Cover and cook for 5 more minutes. Blend cornstarch, water and soy sauce. Stir into meat mixture. Cook, stirring while it thickens. Serve over rice.
