1 1/2 c Vegetable Oil
2 Eggs--Beaten
2 c Sugar
2 tsp. Vanilla
3 c Chopped Apples
3 c Flour
1 tsp. Baking Soda
1 tsp. Cinnamon
1/2 tsp. Salt
1 c Chopped Pecans

Directions:
Directions:
Mix first 4 ingredients, add 2 cups apples. Stir in flour mixture. Add other cup of apples & pecans.

Bake at 350º for approximately 1 hour in tube pan or less in long flat pan.

This recipe is from Lonita's Mom (Susie Elmore). I always make this cake when I have apples that are starting to get bad. This was Bob Rickords (my boss at NuStar) favorite cake. Every time we were bringing food to the office he would ask me to make one to bring. I would usually make him one for his Christmas present everyone year.
