6-8 medium zucchini
2-3 tbsp olive oil
2 pinches salt
3/4 c water

Meat Stuffing
2 slices of day old bread
1/2 lb ground beef OR turkey
1 large egg
1/4 c parmesan cheese
1/2 tsp parsley
1/2 tsp basil
1/2 tsp oregano
1/2 tsp salt
1/2 garlic minced

Cut zucchini in half crosswise about 4" (easier to hollow out), hollow out the zucchini, rinse and set aside. In a small bowl, soak bread in milk for 30 seconds. Remove the crust and squeeze out moisture, crumble and place in bowl, add ground meat, egg, parmesan cheese, spices and mix well.

Stuff the meatball mixture into the zucchini. In large frying pan, add 2 tbsp of oil and place stuffed zucchini in the pan, sprinkle with salt, drizzle with approx 1 tbsp of olive oil. Add the water, cover the pan slightly. Cook on low/medium heat until the zucchini is tender and water evaporated. Add tomatoe sauce. Raise heat, uncover and cook til zucchini is slightly browned, turn and brown other side. Serve immediately! ENJOY!
